Approximately five quarts of gear oil:
The Ferrari book recommends Agip Rotra MP SAE 80w/90.
I couldn't find the Agip, so I used GL-5 80w/90 gear oil (about $2 per quart) and two small containers of Positrac LSD additive from the local GM dealer (about $6 each).
I asked the people of the Ferrari mailing list which gear oil they recommend, and here are their responses:
"I think most of us will vouch that the Agip makes a big difference. For me, I could tell a noticeable difference, especially in cold shifting and in the second gear syndrome."

"You can do one of 2 things:
1) Use a gear oil with an LSD additive
2) Use a standard oil, for example Pennzoil 75W90, and add 2 small containers of Positrac LSD additive from your local GM dealer.
I do the second, which was recommended by a couple of Ferrari mechanics, including the local dealer."

"The consensus on the list has been that synthetic is the way to go. The reasons are easy shifts even when cold, can handle more heat, and has better over all protection. However the 308 transmission and differential share the oil so the brand must be limited slip compatible or you can develop rear end chatter. The only brand I've found that has all this is Mobile 1."

"I use (on a QV engine as well) the Mobile synthetic (I think is 70w/90). Works better in my opinion. Smoother shifting."

"The only reason Ferrari specified AGIP back then was because back then AGIP was a major sponsor of the Formula One racing effort. Today they recommend Shell!"

"Go one better and use a synthetic like Amzoil or Redline. The car will be noticeably easier to shift, get slightly better mileage and require less frequent changes."

"You might want to consider Mobil One synthetic gear oil. I changed to that in my 328 and have been pleased. I think it offers additional protection."

Special Tools
Suction pump - Required if you follow the Ferrari book procedure.
This pump can be purchased for less than $10 at your local auto parts store. You can pump the oil right out of the oil container into the gearbox or transfer case. Or it may be easier if you pour the gear oil into a clean container first.
